Our 2020 Cabernet Sauvignon has an elegant nose of red berries, semi-sweet chocolate, and cinnamon with an earthy touch. The palate is full and juicy with grippy tannins, a balanced acidity and a lightly dusty cocoa finish. The berries were gently crushed prior to cold-soaking for four days at 60° F. The must fermented for 12 days with pump-overs twice a day.
Pairs well with Six Sigma Grass-Fed Beef Bourguignon, and aged cheeses. Try it with a steak Diane in front of a cozy fire.
100% Cabernet Sauvignon, grown at Six Sigma Ranch. Aged 18 months in French oak, 40% new. Alcohol 14.5%.
