2018 Cabernet Sauvignon, Else's Reserve
Our Cabernet Sauvignon has an elegant nose of blackberry, French vanilla, and red berry pie. There is a good balance between bright red notes and moderate alcohol on the palate. The finish is long and supported by approachable tannins that round out this full-bodied wine. The berries were gently crushed prior to cold soaking for 4 days at 60 degrees Fahrenheit. The must fermented for 12 days with pump overs twice a day.
Pairs well with Six Sigma grass-fed beef Bourguignon, and aged cheeses. Try it with a Steak Diane in front of a cozy fire.
Aged 24 months in French Oak, 40% new.
Alcohol 14.2%. Production 400 cases.
